Tropical Mango Coconut Oatmeal

 Tropical Mango Coconut Oatmeal


  • 1/2 cup (40g) rolled oats
  • 1 cup water
  • 1/2 mango, cubed (fresh or frozen)
  • pinch of sea salt
  • 1 tsp vanilla extract
  • 1 tsp agave
  • 1 tbsp flax seed
  • 1 tsp coconut shavings, unsweetened
  • 0.2 oz raw cashews


In a medium size pan, heat the rolled oats, water, and mango over medium heat. Continue to stir with a spatula, whipping the oats, and smashing the mango on the sides of the pan, to help break them down. Keep stirring and whipping occasionally until the mixture thickens to the desired consistency. Add the sea salt, vanilla, agave, flax seed, and stir until incorporated.
Pour into a serving bowl and top with coconut and cashews.
