Homemade Poptarts!

These are super yummy. Way better than the store bought kind and they stay good in the fridge for a long time.
Homemade Poptarts- Yummy!!!

8 T butter (1 stick)
1 C sugar
1 large egg
1 tsp vanilla
4 C flour
2 tsp cream of tartar
½ tsp baking soda
½ tsp salt
½ C milk

1 ¼ C thick jam
¼ C flour

Pastry: Cream butter and sugar. Add egg and vanilla and beat well.Blend the flour, cram tartar, baking soda, and salt together. Alternately add the milk and flour mixture to the butter mixture. Beat dough until well blended. Chill in fridge for several hours or overnight.For Filling: Mix together jam and flour.Preheat oven to 350 degrees.Roll out dough on lightly floured surface cutting out 32 squares or rounds to make 16tarts. Put about 1 T jam in the middle of each shape and top with another. Press the edges together and poke a few holes in the tops to let steam escape.Bake for 15-20 minutes or until lightly browned.When tarts are completely cool frost and sprinkle colored sugar crystals on top. Enjoy!!!
