Found this recipe on Pinterest and it is amazing. It would be really good over coconut rice but we couldn't wait that long. It was amazing paired with sweet potato fries.
Hawaiian Grilled Chicken
3 lbs boneless skinless chicken
1 C low sodium soy sauce
1 C water
3/4 C brown sugar(I tried it with Sucanat and it was good)
1 bunch of green onions
1/4 C chopped onion
1/2 tsp minced garlic
1 teaspoon sesame oil
1/2 can coconut milk
Combine all the ingredients except chicken in a large bowl and stir to combine. Add the chicken and marinate for at least 4 hours or over night.
Cook chicken on a hot grill. Garnish with green onion or just eat it with your hands right off the grill.
