This was what I came up with for dinner tonight. I wanted something that had tons of veggies and was simple. This really hit the spot with the oatmeal bread that I made. We'll do this again.
Zucchini Pasta Bake
Serves 8
2 C dry macaroni pasta
2 Cans (14 oz) diced tomato
2 C fresh mushrooms
1 can (6 oz) tomato paste
1/4 C onion, chopped
2 cloves garlic, minced
4 C. zucchini and yellow squash
1 tsp basil
2 tsp oregano
2 C mozzarella cheese
salt to taste
Boil water and cook the macaroni according to package directions.
In a skillet saute the mushrooms, onion, garlic, and squash with the basil and oregano. Add the diced tomatoes and tomato paste and stir until it is combined. Heat through. Toss sauce with the pasta and put in a 9x13 in casserole dish. Cover with the mozzarella cheese and bake at 350 degrees for 30 minutes or until cheese melts.
