Tuna Melts

Here is a quick healthy meal for those nights when you just can't get it together to dish out a main and sides. We had Tuna Melts with sliced pineapple on the side and it was more than enough. These things really will fill you up!


Tuna Melts
Makes 8 servings

2- 6oz cans of tuna in water, drained
1 clove garlic, minced
1/3 C red onion, minced
3 hard boiled eggs
mayo to desired consistency
8 slices of bread- we used Ezekiel bread tonight and it was really good. It didn't get soggy at all.
8 slices of cheese- we like either muenster or provolone
8 slices of tomato

Preheat oven to 375 degrees. Combine the tuna, garlic, onion, eggs and mayo. Lay out the bread on a large sheet pan. Spoon the tuna mixture onto each piece of bread. Top with a tomato and then the cheese. Bake for about 3-4 minutes or until the cheese melts.
