Hawaiian Salad goodness!
My brother owns a cafe in Anchorage and he serves a salad that I am absolutely in love with. Funny thing is just months ago I proclaimed my hatred for salads and now I have at least 4 that I could honestly eat everyday. I guess it all depends on how they are made. Anyhow the salad he serves is a Hawaiian salad. He uses Vidalia Onion salad dressing that he gets at Costco. I tried to find it at the stores around here but could only find Ken's Steak house brand. Still REALLY good!
Hawaiian Salad Goodness
Combine according to how much you want:
Lettuce
Teriyaki chicken (you can use just plain chicken as well)
toasted coconut
pineapple
red onion
Top with Vidalia Onion dressing and you have a REALLY tasty lunch or dinner or whatever!!!

If you like Catalina dressing try this:
Lettuce
Cubed chicken
Pineapple chunks
Purple Grapes
Chow Mein Noodles
Toss w/ Catalina. Scrumptious.
Also, try this:
Harvest Salad
chopped romaine
chopped pears
chopped apples
chopped, crisped, real bacon (not bacon bits)
large curd cottage cheese, rinsed in a colander until just the curds are left (no more milk)
cashew nuts, coarsely chopped
craisins
dressing:
1 c. oil
1/2 c. sugar
1/3 c. red wine vinegar
1 tsp. dry mustard
1 tsp. salt
1 1/2 tsp. poppy seed
You will thank me. :)
Also, with the same dressing:
Torn Romaine Lettuce (spinach is good too)
green onions
red grapes, halved
sliced strawberries
sugared almonds
Dressing:
1cup oil
1/2 cup sugar
1/3 cup red wine vinegar
1 tsp. dry mustard
1 1/2 tsp. poppy seed
Sugared Almonds:
2/3 cup slivered almonds
1/3 cup sugar
Heat in a skillet at fairly high heat, stirring constantly for about 5 minutes until the almonds are toasted and the sugar has coated them. Remove from heat and continue to stir so that you don't end up with almond brittle.
