We have a deep love for cookies that look a lot like this at our house- Grandpa Buckingham's Ginger Cookies, but the similarities end at the looks. These are pumpkin in all the glorious pumpkin goodness. It's easy to love both kinds since one is not replacing the other and because well, I adore pumpkin so much!
Pumpkin Molasses Cookies
2 1/3 C flour
2 tsp baking soda
1/2 tsp salt
1 T pumpkin pie spice
8 T butter, room temperature
1 C brown sugar
1/4 c molasses
2/3 c pumpkin
1 lg egg
1/2 c sugar for rolling
Beat the butter and sugar in a bowl until smooth. Add the molasses and pumpkin and beat again. Finally add the egg and beat for a minute more.
Mix in the dry ingredients. At this point you may need to chill the dough so it will be able to roll into balls. I did! So chill for about 1 hr. I think you could probably add just a little more flour so you wouldn't have to chill. I will have to try that next time.
Preheat oven to 350. Roll into 1 in balls and then roll in sugar. Bake for 12-14 min.
