This recipe is the brain child of my friend Kim's daughter. She perfected it for a fair competition and if I remember correctly she won. And rightly so.
BUTTERFINGER COOKIES
1 cup butter, softened
1 ½ cup sugar
1 1/3 cup brown sugar, packed
4 egg whites
2 ½ - 3 cups peanut butter
3 tsp vanilla extract
2 cup flour
1 tsp baking soda
½ tsp salt
5 Butterfinger candy bars (2.1oz each), chopped
Cream butter & sugars. Add egg whites, beat well. Blend in peanut butter & vanilla. Combine flour, baking soda & salt; add to creamed mixture & mix well. Stir in candy bars. Place 1 ½” balls on greased baking sheets and bake at 350 for 10-12 minutes ‘til golden brown.
