It's been a little while since I have posted. I haven't tried anything new until today and it was fab.u.lous! So I had to share!
Spinach Shrimp Stuffed Mushrooms
3-4 medium mushrooms- not large or tiny :)
12 med. shrimp, cooked and chopped
1 c spinach, chopped
1-2 cloves garlic, minced
1 T olive oil
1 T parmesan cheese
Wash the mushrooms and then remove the stems. Chop them up into small pieces. In a small frying pan saute' the mushroom caps in about 1/2 T olive oil until browned and starting to get soft. Remove and place on a plate. Add the remaining olive oil to the pan and then saute' the shrimp and mushroom pieces with the garlic. Once they are done add the spinach and cook only until wilted.
Fill the caps with the shrimp mixture and then top with the parmesan cheese. Serves 1
