Pumpkin Butter

Hope you are not sick of pumpkin stuff yet because here comes another one. I scoured the internet trying to find a simple pumpkin butter recipe and came up with this one. It tastes amazing, but is not pretty. It looks like a cross between hummus and curdled milk. But as I said, it tastes like all the wonders of Autumn. I just tried it on whole wheat toast and it made it wonderful.

Pumpkin Butter
1/2 C butter, melted
1/2 C pumpkin
1/4 C powdered sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
Whip the butter and pumpkin until creamy. Add the powdered sugar, cinnamon and nutmeg. Beat until combined. It does not look pretty but it really does taste great.
I have a few more recipes that I am going to try. Ones that make it kind of like apple butter. So I'll be back for more pumpkin fun soon!

  2. I found this recipe on a friend's blog, and thought of you.

    Pumpkin Butter:
    1 lg. can Pumpkin
    1 c. Apple juice
    2 tsp. ground Cloves
    1 1/2 c. Sugar
    2 tsp. Cinnamon
    1 tsp. Gr. Nutmeg

    In heavy sauce pan, combine all ingredients, mix well, bring mixture to a boil. Reduce heat, simmer 30 min. (stirring frequently), until thickened.
    Store in fridge.
    For canning, water bath 10 min.

    Do not freeze!
